Let Them Eat Cake

I cannot explain in words how happy I am that the Fourth of July, just happens to fall on a friday this year. Short week, long weekend! However, trying to fit everything into a four day week may make you feel unprepared for the holiday.
So, if you have a party tomorrow and nothing to bring, might I suggest a wonderful summer cake? It's light, it's delicious, it's super easy and takes almost no time to prepare! Win.

Whipped Fruit Naked Cake

  • White Cake Batter (Use favorite box or I used this recipe)
  • 2 Cups Heavy Cream
  • 2 Tablespoons Sugar (or stevia)
  • 1 teaspoon vanilla
  • Sliced strawberries
First bake the cake according to directions, then let them cool in the fridge for a few hours or overnight. Next, time to make the whipped cream. Using a mixer, pour the two cups heavy cream into the mixer with the sugar and vanilla. Mix on high until stiff peaks form, then put to side. Bring out the cooled cakes, and place one on cake stand. Use a rubber spatula to place a good amount of whipped cream in the center of the cake. Next place strawberries  on the whipped cream, or mix into the whipped cream-beware, mixing the strawberries in before hand may leave whipped cream a pinkish hue! Place the second cake layer on top, lightly pressing down in order to help distribute the whipped cream center evenly. Fill in the holes in the center with additional whipped cream and use spatula to smooth it out. Finally, place a decent amount of whipped cream on the top of the cake, smooth, and place strawberries where you desire-have fun with it! Refrigerate cake until ready to enjoy!
